Ingredients:

For suji upma, you’ll need:

  • 1 cup semolina (suji)
  • 2 cups water
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 green chili, chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 cup chopped vegetables (carrot, peas, bell pepper)
  • Salt to taste

Instructions:

Making Butter Biscuits:

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, and mix until well combined.
  • In another bowl, sift together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll out the dough on a floured surface to about 1/4 inch thickness.
  • Use cookie cutters to cut out shapes from the dough and place them on a baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.

  • Soak the chickpeas in water overnight.
  • Drain and rinse the chickpeas, then cook in a pressure cooker with enough water until soft.
  • In a bowl, combine the flour, baking powder, baking soda, and salt.

  • Divide the dough into small balls and roll out into circles.

  • Once they start to splutter, add the chopped onion, green chili, and sauté until the onions turn translucent.

  • In the meantime, dry roast the semolina in a separate pan until it turns light brown.
  • Add the roasted semolina to the pan and mix well with the vegetables.
  • Add water and salt, and cook until the upma thickens and the water is absorbed.
  • Garnish with chopped coriander leaves and serve hot.
